Creamy Dairy Free Mushroom soup

Ingredients
  

  • ½ Sweet white onion
  • 3-4 cups Mixed mushrooms
  • 700 grams Zucchini
  • 1 tbsp Curry
  • 1 tbsp Oregano
  • 1 tbsp Cumin
  • 1 tbsp Ground coriander seed
  • 1 pc Kombu
  • 5 cups Filtered water
  • 100 grams Cashews
  • Salt to taste

Instructions
 

  • Start by sautéing the onions until translucent.  
  • Add mushrooms and stir gently 
  • Add spices 
  • Add zucchini, stir and cook for 5 minutes. 
  • Add water. Let the soup come to a gentle boil for about 10 minutes 
  • Then add cashews and cook for about 5 minutes. 
  • Remove Kombu 
  • Transfer soup to a high-speed blender and blend at maxim speed for about 20 seconds or until you have a creamy consistency.
