Creamy Dairy Free Mushroom soup
Ingredients
- ½ Sweet white onion
- 3-4 cups Mixed mushrooms
- 700 grams Zucchini
- 1 tbsp Curry
- 1 tbsp Oregano
- 1 tbsp Cumin
- 1 tbsp Ground coriander seed
- 1 pc Kombu
- 5 cups Filtered water
- 100 grams Cashews
- Salt to taste
Instructions
- Start by sautéing the onions until translucent.
- Add mushrooms and stir gently
- Add spices
- Add zucchini, stir and cook for 5 minutes.
- Add water. Let the soup come to a gentle boil for about 10 minutes
- Then add cashews and cook for about 5 minutes.
- Remove Kombu
- Transfer soup to a high-speed blender and blend at maxim speed for about 20 seconds or until you have a creamy consistency.
