Granola: perfect for the holidays

It is that time of the year and it got me thinking about presents that just make you feel unique, loved, and special. I think I have the perfect present idea that clicks all of those boxes. Are you ready? Here it is, the answer you are looking for is GRANOLA!

 

When I say GRAN you say OLA!

 

This is such a simple recipe and it will make you feel like a Goddess in your kitchen. It is the perfect recipe for all levels of cooking, and for these chilly winter days. Plus it is gluten, sugar and dairy free. 

 

This is also an ideal recipe to introduce or remind yourself about batch cooking, and how smart it is to prep before a busy time like the holidays, or simply pour out all your love into this granola recipe to give this Christmas season to loved ones, especially now that it is all about sustainability and low waste.

 

Also, remember that you can add your own flare to this. Feel free to add spices like cinnamon, vanilla, chai, pumpkin spice….. the SKY IS YOUR LIMIT. 

Without further ado lets review this recipe.

 

Ingredients:

  • 1 ½ cup of gluten free oats oats
  • ½ cup Almonds
  • 1/3 cup sunflower seeds
  • 1/3 cup pumpkin seeds
  • 1/3 cup cashews
  • 1/3 cup cranberries
  • ¼ cup coconut oil, melted
  • ¼ maple syrup.

 

Method

 

  • Preheat oven to 275˚
  • Place almonds, dates, sunflower and pumpkin seeds in a blender and pulse for about 5 seconds or until everything has been roughly chopped.
  • Transfer mixture into a bowl and add oats, cranberries, coconut oil and maple syrup.
  • Transfer granola onto a baking sheet with parchment paper or a baking mat on it. Spread granola thinly and evenly on the baking sheet; you may need two of them.
  • Bake for 35 minutes. You can rotate baking sheets half way through.
  • Once granola is done, let it cool off completely before transferring to airtight containers.
