Shakshuka-ish. Say what now?!!

Well, that was a mouthful! This is a traditional Israeli breakfast dish where the eggs are poached in a tomato- red pepper sauce. Some traditional spices used in this dish are cumin and paprika. The dish is finished in the oven and served with bread.

There is also a very similar Mexican dish called “drowned eggs.” They almost look identical, but the Mexican version uses a fresh tomato sauce, nopales and various chili peppers. Both recipes are delicious. I have seen pictures of it all over social media and always wanted to cook it.

The following is my own version of this traditional dish. I usually prepare this dish on Sunday mornings or when having guests, as it is super easy to put together and it is full of flavour.

Ingredients:

  • 2 tbsp. Avocado oil
  • 4 mushrooms, quartered
  • 1 red pepper, julienne cut
  • 1 yellow pepper, julienne cut
  • 1 cup of crushed tomatoes – I use canned
  • 2 green onion strings, finely chopped for garnish
  • A handful of cilantro leaves, finely chopped for garnish.
  • 1 cup of arugula
  • 1/2 avocado, sliced
  • 4 eggs
  • salt
  • pepper

Instructions:

  • Place cast iron skillet on medium high heat
  • Add avocado oil
  • Add mushrooms and peppers
  • Sauté until mushrooms are golden and peppers are tender to the fork
  • Add tomato sauce
  • Gently stir all together
  • With a spoon create a little nest in the tomato sauce where you will crack each egg individually
  • Once you have cracked all the eggs into the sauce add salt and pepper
  • Let it simmer until the egg whites are firm.
  • Cover with a lid to help the yolks cook faster. Be careful not to overcook it. You should only cover for about 2 minutes or until yolks look firm but soft in the middle.
  • Turn off the heat and remove the lid.
  • Add arugula right in the middle of the skillet along with chopped green onions and cilantro to garnish.
  • Add avocado slices on top
  • Serve immediately on its own or with some delicious bread or corn tortillas for gluten sensitive people.
